CAMPSIDE RECIPES: Grilled Chicken Breast with a Lemon Pepper Veloute

Grilled Chicken Breast with a Lemon Pepper Veloute
Ingredients needed:
4 8-ounce chicken breasts
1 heaping tablespoon of minced garlic
4 ounces of olive oil
1 teaspoon of salt
1 teaspoon of black pepper
2 ounces of lemon juice
1 fresh lemon (sliced into four wedges)
16 ounces of chicken stock
1 can pan spray
3 heaping tablespoons of flour
Equipment needed:
1 chef’s knife
1 cutting board
Heat source (gas stove and grill or fire pit with grate)
1 2 quart sauce pan
1 stirring spoon
Preparation:
Heat up olive oil in sauce pan. Add garlic and sauté until tender. Add flour and make blond roux. Add chicken stock, lemon juice, salt and pepper. Cook on medium heat until desired consistency is reached. Add more seasonings if needed. While sauce is cooking, spray chicken with pan spray. Cook on grill until juices run clear or (165 degrees or greater). Pour sauce over chicken and serve immediately. Top each chicken breast with lemon wedge.
