CAMPSIDE RECIPES: Sautéed Spinach

Sautéed Spinach


Ingredients needed:

1 bag fresh spinach
2 heaping tablespoons of fresh minced garlic
4 ounces of olive oil
1 teaspoon Mace (spice similar to nutmeg, but milder)
1 roasted red pepper (pimento, canned, small dice)


Equipment needed:

1 large sauté pan
Heat source (gas stove, fire pit with grate or grill)
1 chef’s knife if needed to dice up pimentos


Preparation:

Heat olive oil in sauté pan; add garlic and sauté until tender. Add spinach and cook down some before adding Mace and roasted red peppers. Serve immediately.
